MINI FALL PIES // AN EASY RECIPE
If you're anything like me, not only do you love the fall season but you also love all of the yummy recipes. I love to bake, it's probably one of my favorite things to do in my spare time! This recipe for Mini Caramel Apple pies is so quick, easy and delicious! If you have an hour to make these, I highly recommend you do. These would make the perfect little dessert for treating your friend to coffee in your home or even to bring to a party.
MINI CARAMEL APPLE PIES //
2 Boxes of store bought refrigerated pie crust
3-4 Peeled and diced green apples
2 Tablespoons of all-purpose flour
1 Teaspoon of Cinnamon
1/4 Cup of Sugar
5-10 Store bought caramels (I used Kraft....so good!)
1 Tablespoon of lemon juice
Egg Wash (1 Egg whisked with 1 Tablespoon of water)
Crystal sanding sugar (Typically found near the sprinkles in the baking section)
Preheat the over to 425 Degrees and line a baking sheet with a silpat or parchment paper, set aside.
Combine the diced apples, lemon juice, cinnamon, sugar and flour. Mix the apples until they are completely coated.
Unroll the pie dough and use the opening of a glass or a circle cookie cutter to make small round circles.
Spoon 1 Tablespoon of the apple mixture into the center of the pie circle. Do not overfill them or they won't close! Top the filling with another crust circle and crimp the edges closed with a fork. Lightly cover each pie with the egg wash and garnish with the crystal sanding sugar.
Bake the pies for 15-20 minutes or until light golden brown. Place on cooling rack and enjoy!
If you have extra apple mixture like I did, I whipped up a quick crumble to put over the rest of it and made an apple crisp! Again, super easy. Just put the rest of your mixture in a small baking dish and add the topping mixture below. Bake until slightly golden brown on top, 10-15 minutes at 425.

1 Cup flour
1 Cup Brown Sugar
1 Stick of Butter
